Need a Beef Cake?

My birthday came and went this year and due to my diet I have to cut out a lot of sugar, that meant NO BIRTHDAY CAKE.  So I came up with this!

I turned meatloaf into my birthday cake.  I cooked my meatloaf recipe in a bundt pan, iced it with the best mashed potatoes you will taste, and decorated it with green beans. It was an entire meal in every slice!  Watch the video below to see how I did it!

All about Thanksgiving

I wanted to write an article that included as many topics about Thanksgiving that I could.  I've included a short history and how to cook various Thanksgiving dishes.  I am unable to spend Thanksgiving with my family this year.  Iv'e decided that I am going to take a few new friends that are unable to share this day with their families out to eat and a movie.  Send me a tweet with what you are thankful for this year!

Thanksgiving or Thanksgiving Day, currently celebrated on the fourth Thursday in November by federal legislation in 1941, has been an annual tradition in the United States by presidential proclamation since 1863 and by state legislation since the Founding Fathers of the United States. Historically, Thanksgiving began as a tradition of celebrating the harvest of the year.  There are claims that the first Thanksgiving was celebrated by Spanish explorers in Texas at San Elizario in 1598.

Amazing Green Bean Casserole with a twist!

4 big servings or 6 smaller servings

1 lb green beans blanched
1 lb asparagus blanched
1 sm potato blanched
5 baby portabella mushrooms sliced
1 sm onion caramelised
2 cloves pickled garlic chopped
1 cup milk
1 can Cream of Mushroom soup
Seasonings:
Onion Powder
Cayenne Pepper
Parsley Flakes
S&P
Topping:
1/2 cup bread crumbs
1/2 cup parmesean cheese
3 tbsp olive oil
2 tbsp chopped hazelnuts

In a shallow casserole dish, whisk your milk, soup, and seasonings until smooth, add all ingredients except for toppings, mix together topping ingredients and add to the top.  Bake at 350 for 30 minutes

New Spin on Mashed Potatoes

Want to try and spice up those old plain mashed potatoes?

Try this:

Cook your potatoes just like normal but leave the skin on, add butter, milk, S&P and mix... Simple..RIGHT? Mash them up well, I used a hand beater.

Now add a few caramelized onions and garlic powder....I cooked my onions in a little truffle oil to give them a little earthier flavor!

These potatoes were AWESOME!

Food Brings Back Childhood Memories

When I was growing up, during the summer my mother would make us lunch on her days off from work. Normally lunch always consisted of some form of leftovers from the day before. The thing I remember the most is Grilled Cheese and Potato Salad. My taste have changed since I was a child but I still crave my mothers Potato Salad with a Grilled Cheese. Below is the recipe for my childhood and the grown-up version I make for myself now.

Old Fashioned Grilled Cheese

2 slices white bread
2 slices American Cheese
Butter

Assemble the sandwich with the cheese in the middle, slather butter on the top and bottom of the bread. Place in pan on the stove and brown the bread...that's it! Yum.

New Version Grilled Cheese

2 slices of Wheat Bread
1 slice of American Cheese
1 slice of Muenster Cheese
Butter
Olive Oil
Cayenne Pepper
Garlic Powder
S&P

Prepare the sandwich just as before...but in the pan pour 1 tsp of olive oil, heat.....sprinkle top of buttered sandwich with just a touch of cayenne, garlic powder and S&P. Grill till golden!

Somehow now that I am older, a half of Avacado and a few olives make it on the plate with the grilled Sandwich and PotatoSalad. I also put the slightest hint of drizzle of honey on the potato salad now. My mouth is watering just thinking of this......Thank God for Mothers!

Leftover Mashed Potatoes

Poor Man's Gnocci

This is a great little trick for using leftover mashed potatoes or baked potatoes.

In a bowl make sure that your potatoes are mashed very well (I used approx 2 cups of leftover potatoes) add 1 egg and mix well. Add any type of seasonings you prefer. I added approx 1/4 cup flour to the mixture to tighten it up to a dough. Yours may take more/less flour due to the moisture in your potatoes and the egg. In salted boiling water add teaspoon size dumpling to the water and wait 30 seconds after they float. Remove them and pat dry on a paper towel. You can sauce them with Pesto or Alfredo Sauce and Serve.
