MMMMM Breakfast of Champs

Doesn't this look amazing????? Here is what I made: Quiche, Yogurt/Agave Parfait, and Berry Smoothie

The Quiche:


In a small skillet I added some fresh spinach, small potato cubes, and a few small broccoli florets...Saute until tender....In a blender combine 7 eggs and 1/2 cup buttermilk and seasonings of you liking....blend until smooth. In 12 small ramekins divide your potato/broccoli mixture. Then pour in your egg mixture....bake at 350 until middle is firm. I garnished with fresh spinach cut into ribbons.


Parfait:


In a parfait glass layer granola, then Greek yogurt, then honey, then yogurt, then granola, and top with agave nectar.


Smoothie:


In a blender add 1/2 cup fresh pineapple, 1/2 cup fresh mango, 1 cup fresh strawberries, and 4 cups grape juice...Blend until smooth and serve over ice or chilled.

Sour Cream & Chive Omelet

I am in the middle of a popular low carb diet so many of my upcoming recipes will be GREAT but low carb too!

Ingredients:

3 Eggs

1 TBSP Sour Cream

1 TBSP Chopped Chives

2 TBSP Parmasean Cheese

1 TBSP Olive Oil

S&P to taste


Directions

In a bowl combine the Sour Cream, eggs, and chives in a bowl. Heat the olive oil in a pan on the stove, add the egg mixture. When the eggs begin to set up add the cheese and perform a trifold with the egg. Serve. *Garnish, I garnished mine with a small amount of sour cream and chopped chives. If you want more sour cream, add it as a filling with the cheese! Enjoy!
